Bandit Hole: more rounded, chaotic. Almost circular or diagonalish rooms. Some long tunnels near the edges that don't go anywhere.

Dungeon: All rectangular, ordered. Less tunnels. More "pre-built" parts.

Water: All circles and windy tunnels.

Hell: Like the dungeon, except networks of tunnels running parallel to each other.

Moon: All "open" with just islands of negative space, represented as craters. Perhaps it loops? (Would be awesome)
